About the Farm

Nestled in the scenic hills of Goble, just outside Rainier, Oregon, Elemental Acres is home to a growing herd of rare Meishan pigs. Our pigs live outdoors on pasture and wooded hillsides where they can root, forage, and express their natural instincts every day.

We focus on regenerative and resilient land management, approaching the farm holistically so the health of the animals, soil, forest, and surrounding ecosystem all work together. Our pigs are raised humanely and ethically, with their welfare as our top priority.

Our MissionElemental Acres was founded in 2020 with a clear goal: to help preserve and expand the population of Meishan pigs in the United States.

Today, our farm is home to over 80 Meishan pigs and three active breeding groups dedicated to maintaining healthy genetics and strengthening the breed nationwide.

By raising Meishans for both breeding and exceptional pork, we help ensure that this rare breed continues to thrive for generations to come.

Tips for Cooking with Meishan

We know that cooking Meishan Pork can be a bit intimidating, but don't worry, we've got you covered!

‍

Below, we've included some expert tips and a step-by-step guide on how to cook four unique dishes to perfection. Whether you're a seasoned chef or just starting out in the kitchen, you'll find all the information you need to create a delicious meal.

‍

Perfect Juicy & Tender Pork

‍

The #1 Rule when cooking Meishan Pork is low and slow. The fat is likely very different from what you are used to. The lard is a very different texture from industrial ag pork, rich in flavor, and renders at a much lower temperature. It is also very nutritious.

‍

But beware, we have found that Meishan lard has a tendency to flame up easily so if using a grill or open flame you cannot leave it unattended as it will easily turn into a candle if you aren't careful. We always say that on a grill indirect heat is best.

‍

Our favorite ways to cook Meishan Pork are using a cast iron skillet, a sous vide, or a combination of the two. It is also excellent for using in slow cooker recipes; just remember that Meishan Pork doesn't need the help of additional fats to remain juicy as the fat renders beautifully. In fact, if you've tried our menu items featuring pulled pork you might be surprised to learn that when cooking Mike adds ZERO liquid to the slow cooker!
